Pork Singapore noodles

This one-dish dinner is a weeknight winner! It’s a fast and easy recipe that’s ready in 20 minutes. Full of spice and flavour, it’s sure to become a fam fave.

Method

1.Cook noodles according to packet directions. Drain.
2.Heat half the vegetable oil 
in a large, non-stick wok 
over a high heat. Add pork. Stir-fry for 3 minutes, or until browned. Remove.
3.Add onion and capsicum to hot wok. Stir-fry for 3 minutes. Remove.
4.Combine hot water, curry powder sauce and sesame oil 
in a small jug.
5.Heat remaining vegetable oil 
in wok. Add eggs. Stir-fry for about 30 seconds, or until scrambled and set.
6.Return pork and capsicum mixture to wok with noodles and curry mixture. Stir-fry for about 
2 minutes, or until hot. Add spring onions. Toss until combined.
7.Serve with extra spring onions, bean sprouts and sweet chilli sauce (optional).
