TIP! Melon ballers are available from specialty kitchen shops. If you prefer a sweeter drink, use lemonade instead of mineral water. Midori is a melon-flavoured liqueur. Skewers can be prepared up to several hours ahead. Keep, covered, in the fridge.

Using a melon baller, scoop out 12 balls from honeydew. Thread three balls onto each skewer (or wooden popsicle sticks).

Combine Midori, vodka and juice in a medium jug. Refrigerate for 1 hour.

Divide mint and apple among four tall glasses (1 2/3-cup capacity).

Place 4 ice-cubes in each glass. Pour about ¾ cup Midori mixture into each one. Top up with mineral water or lemonade. Serve with honeydew skewers. Decorate with extra mint.
