Mexican Spiced Bolognese

A couch-pleasing hearty, flavour-packed take on bolognese.

TIP: This spicy beef also makes a tasty filling for warmed flour tortillas or can be served over steamed rice for a hearty meal.



Step 1

Heat an oiled large, deep frying pan over a medium to high heat. Add onion, carrot, mushrooms and garlic. Cook, stirring occasionally, for about 3 minutes or until slightly softened. Add beef. Cook, stirring to break up mince, for a further 5 minutes, or until browned.

Step 2

Add paste and spice mix. Cook, stirring, for 1 minute. Stir in tomatoes and 1 cup water. Bring to boil. Gently boil, stirring occasionally, for 15 minutes or until thick.

Step 3

Stir in corn, capsicum, beans and chipotle. Simmer for a ­further 5 minutes, or until hot.

Step 4

Serve bolognese with corn chips, sour cream, avocado, coriander and lettuce.
