TIP: To prepare lime leaves, cut away and discard inner stem from each leaf. Stack leaves on top of each other and roll up tightly. Shred finely using a large knife.



Step 1

Cut florets from broccolini. Slice stems in 1cm rounds.

Step 2

Stir-fry paste in an oiled wok over a medium heat until fragrant. Whisk in stock, milk and peanut butter. Add pumpkin. Bring to boil. Simmer for 5 minutes, or until almost tender.

Step 3

Add broccolini to wok with corn and 2 lime leaves. Simmer for 2 minutes, or until tender. Stir in sauce.

Step 4

Meanwhile, prepare noodles according to packet directions. Drain.

Step 5

To serve, divide noodles among serving bowls. Top with curry. Squeeze over lime juice. Sprinkle with remaining lime leaves.
