TIP: For an added spicy flavour, add extra paste according to your own taste. Or for a change, stir 250g cooked, peeled prawns into the cooked rice mixture after the 5 minutes standing time.

Heat an oiled, large, deep, non-stick frying pan over a medium heat. Add eggs. Swirl to coat base of pan. Cook, without stirring, for about 2 minutes, or until just set. Slide out of pan onto a chopping board. Roll up. Thinly slice.
Reheat pan over a medium heat. Add onion, capsicum, carrot and paste. Cook, stirring occasionally, for about 5 minutes, or until vegetables are soft.
Stir in stock cubes, 3 cups water and rice. Bring to boil. Simmer, covered, stirring occasionally, for about 20 minutes, or until rice is tender. Remove from heat. Stand, covered, for 5 minutes.
Arrange omelette over nasi goreng. Sprinkle with coriander. Serve with lettuce wedges.
