TIP:Â This recipe is great for a summer brunch. Mix and match the stone fruits to your liking and try adding some pitted cherries, if available. Brioche can be replaced with pancakes or waffles for a change.
Ingredients
Method
Halve stone fruits. Remove and discard stones.
Melt butter in a large, non-stick frying pan over a medium to high heat until foamy. Add stone fruits. Cook for about 5 minutes, turning occasionally, until lightly scorched and golden.
Pour over maple syrup and orange juice. Sprinkle with cinnamon. Bring to boil. Gently boil, shaking pan occasionally, for 2 to 3 minutes, or until liquid is slightly thickened and syrupy.
Meanwhile, heat a char-grill pan over a high heat. Add brioche. Cook until light golden and toasted.
Serve warm fruit and syrup over brioche toast. Sprinkle with macadamias.
