Grease a 14cm x 24cm large loaf pan. Line base and sides with baking paper, extending paper 5cm above pan edges.Â

Place mince in a large bowl. Add breadcrumbs, eggs, onion and parsley. Season with salt and pepper. Mix well. Press firmly into prepared pan.Â

Cook in a moderate oven (180C) for about 1 hour, or until meatloaf is cooked through. Remove. Stand in pan for 20 minutes. Transfer to a serving plate. Â
4.
Serve warm with mint jelly and mashed potato.
