This gorgeous no-bake passionfruit slice combines a sweet, lemony biscuit base with a creamy passionfruit icing, and we just know you won’t be able to resist it!

My kids and I love picking ripe passionfruit off our vines and then sitting on the grass enjoying the sweet, fresh pulp. This recipe is one of our favourite ways to use up excess fruit.The base of this slice is no ordinary biscuit base – it has a generous tablespoon of lemon zest added to it, to help give it a bit of zing. This also helps to cut through the sweetness of the slice.  The passionfruit icing is rich and creamy, and you may just want to hide the bowl you make it in, (so that you can eat the leftovers without the kids seeing you!). Depending on the size of your passionfruit and the pulp you get from them, you may need to add a teaspoon or two of water to help get a spreadable consistency to your icing. Enjoy!
No-bake passionfruit sliceMakes: 24 pieces Prep time: 30 mins Chill time: 2 hr 30 mins Total time: 3 hours Ingredients:
  • ½ cup sweetened condensed milk
  • 125g butter, melted
  • 250 g packet plain biscuits, finely crushed (e.g. Arrowroot or similar)
  • 1 tbsp lemon zest
  • 1 cup desiccated coconut
For the passionfruit Icing
  • 2 cups icing sugar mixture
  • Pulp of 3 passionfruit
  • 20g butter, softened
Method:
    1. Line a 28cm x 18cm slice tin with baking paper. 2. Place the condensed milk and melted butter in a large bowl and stir to combine. 3. Add the crushed biscuits, lemon zest and coconut to the melted butter mixture and mix to combine. 4. Pour the mixture into your prepared slice tin and use the back of a spoon to press the mixture into the tin before placing it into the fridge for 30 minutes to chill. 5. To make the passionfruit icing, place the icing sugar mixture, passionfruit pulp and butter into a small bowl and mix until smooth. 6. Pour the icing over the chilled slice base. Use a butter knife to help spread it across the slice. 7. Place the slice back into the fridge for 2 hours (or until the icing has set) before cutting into squares to enjoy.
Tips:●      Depending on the size of your passionfruit, you may need to add a teaspoon of water to your icing mixture to help it get to the right consistency.  ●      I used Milk Arrowroot Biscuits for this recipe, but you can use any other plain biscuit.●      You can place the biscuits into a food processor and blitz until they are finely crushed.
