Step 1
Heat an oiled, large deep frying pan over a medium heat. Add onion and garlic. Cook, stirring occasionally, until soft. Add beef. Cook over a high heat, stirring to break up mince, for about 3-4 mins, or until browned. Add chipotle seasoning. Cook, stirring, for 1 min.
Step 2
Stir in passata, stock, beans and corn. Bring to boil. Gently boil, stirring occasionally, for about 10 mins, or until thickened. Season with salt and pepper. Remove from heat. Stir in coriander.
Step 3
Serve with warm tortillas, sour cream and avocado. Garnish with coriander sprigs.
