TIP – We used Mingle Smash These Smokey Chipotle Tacos All Natural Recipe Base but any smoky seasoning blend can be used.

Method

Step 1

Place pork in large dish. Drizzle over oil. Sprinkle with recipe base. Rub to coat.

Step 2

Heat an oiled, large chargrill plate or barbecue grill plate over a medium-high heat. Add pineapple. Cook for about 2-3 mins on each side, until lightly charred. Transfer to a large plate.

Step 3

Add pork to same, oiled chargrill plate. Cook for about 4 mins on each side over a medium heat, or until cooked to your liking. Transfer to an oven tray. Top with pineapple and cheese slices.

Step 4

Cook under a preheated grill until cheese is melted.

Step 5

To make the Salad, place cucumber, capsicum, avocado, coriander and onion in a large bowl. Season. Squeeze over lime. Gently toss.

Step 6

Serve pork with salad.
