To keep fritters warm, place on an oven tray. Cover lightly with foil. Place in a very slow oven (120C).

Toss peas and flour in a large bowl. Add eggs and ricotta. Season with salt and pepper. Stir to combine.

Heat a lightly oiled, large, non-stick frying pan over a medium heat. Add a heaped tablespoon of mixture, spreading to about 6cm in diameter, to make a fritter. Repeat to make four more.

Cook for about 2 minutes on each side, or until golden brown. Remove. Cover to keep warm. Repeat with remaining mixture to make about 15 fritters in total.
4.
Serve warm fritters with relish and mixed salad leaves (optional).
