TIP: For a spicy kick, try replacing ham with a spicy sausage or chorizo, or add finely chopped red chilli. Instead of serving ham mixture over bread, it’s delicious stirred through cooked pasta.

Method

1.

Heat an oiled, large, deep, non-stick frying pan over a medium heat. Add ham and onions. Cook, stirring occasionally, for about 5 minutes, or until golden and crisp.

2.

Add capsicum, beans and pasta sauce. Simmer, covered, for about 10 minutes, or until sauce is thickened.

3.

Serve on breadstick with rocket and parmesan.
