Simple banana s’mores muffin recipe

This muffin recipe is a bonafide crowd pleaser.

TIP: You will need about three large bananas (350g). Overripe bananas are best as they impart a sweet flavour. Muffins will keep in an airtight container for up to three days.

1.

Line a 12-hole muffin pan (1/3 cup capacity) with deep paper cases.

2.

Sift flour and soda into a large bowl. Stir in sugar and 1/2 cup each of the marshmallows and Choc Bits. Make a well in the centre.

3.

Add banana, eggs, butter and milk. Stir until just combined (Do not over-mix). 

4.

Divide evenly among paper cases. Sprinkle with remaining marshmallows and Choc Bits. 

5.

Cook in a moderate oven (180C) for about 20 minutes, or until muffins are cooked when tested with a skewer, Stand in pan for 10 minutes. Transfer to a wire rack. 

6.

Serve muffins warm or at room temperature.
