But it’s her recipe for zucchini pasta that really caught our eye because of it’s VERY unusual cooking method.

Meghan starts by cooking one diced onion in a tablespoon of oil for about six minutes over a medium heat. She then adds five chopped medium zucchini and 1/2 a cup of water, and a chicken stock cube.

She then reduces the heat to low, covers the pot and cooks the mixture for FOUR HOURS. Yes, you read that right – FOUR HOURS. Not one, not two – but a whopping four.Meghan says the super long cooking time leads to the mixture becoming super creamy and delicious – YUM-MO.

Deeeeeeeelicious – trust us. Extra creamy, extra tasty – and one of the best vegetarian pastas we’ve tried. You go girl!
