Spray baking dish with canola spray. Pour in cooked rice and smooth out over the bottom of the dish.

In a large bowl, add boiling water and packet soup and mix to combine. Add tuna, corn, spring onions and parsley. Stir to combine.Â

Pour into baking dish on top of rice. Top with mozzarella.Â
4.
Bake in 200-degree oven for 15 minutes. Serve immediately.
