Method
Step 1
CITRUS HONEY GLAZE: Combine all ingredients in a medium saucepan. Season with salt and pepper. Bring to boil. Boil for about 8 mins, or until slightly thickened. Remove. Transfer half the glaze to a small bowl.
Step 2
Heat an oiled, large frying pan over a high heat. Add chicken in two batches. Cook for about 3 mins, turning, until golden. Transfer to an oven tray lined with baking paper. Brush the glaze from the bowl over chicken.
Step 3
Cook in a 200 °C preheated oven for about 15 mins, or until chicken is cooked through.
Step 4
Meanwhile, cook rice according to packet directions. Stir in onions and coriander.
Step 5
Gently boil remaining glaze in saucepan for about 3 mins, or until thickened.
Step 6
Serve chicken with rice. Drizzle with hot glaze.
