Step 1

PATTIES: Combine chicken, onions, marinade and ½ cup of the breadcrumbs in a large bowl. Mix well. Divide into six equal portions. Coat each in remaining breadcrumbs and shape into patties (about 8cm diameter).

Step 2

Heat a well-oiled, large, non-stick frying pan over a medium heat. Add patties. Cook for about 4 mins on each side, or until golden brown and cooked through.

Step 3

Transfer patties to an oven tray. Cover loosely with foil. Keep warm in a 150C preheated oven. Wipe pan clean with paper towel.

Step 4

Add carrot to same, oiled pan over a medium heat. Cook, stirring, for 3 mins. Add capsicum. Cook, stirring, for a further 2-3 mins, until vegetables are just tender. Remove.

Step 5

Spread mayonnaise over roll bases. Top with spinach, patties, carrot and capsicum. Drizzle with sweet chilli sauce. Replace roll tops.
