Warm up with this tasty Chicken and Tofu Laksa

Fried tofu puffs are available at Asian grocers and major supermarkets. This dish is best served just after making.

Ingredients

Method

Step 1

Heat an oiled, large, non-stick frying pan over a high heat. Add chicken in two batches. Cook, stirring, for about 3 mins, or until just cooked. Remove.

Step 2

Add laksa paste to same pan. Cook for 1 min, or until fragrant. Add coconut milk, stock, noodles, and tomatoes. Stir to combine. Bring to a boil. Cover with a lid. Simmer, stirring occasionally, for about 5 mins, or until noodles are tender.

Step 3

Return chicken to pan with tofu and the combined sauce and juice. Cook for 1 min.

Step 4

Serve with bean sprouts, coriander, and lime wedges.
