Method

Step 1

Prepare noodles according to packet directions. Cut fish into 5cm pieces.

Step 2

Heat an oiled, non-stick wok over a medium-high heat. Add onion and beans. Stir-fry for 2 mins, or until onion is soft.

Step 3

Stir in paste, coconut milk and ¹/³ cup water. Bring to a gentle boil. Gently stir in fish. Simmer for about 6 mins, or until fish is almost cooked.

Step 4

Add snow peas and coriander. Cook, stirring occasionally, for about 2 mins, or until fish flakes easily. Season with salt and pepper.

Step 5

Divide noodles among serving bowls. Spoon over fish mixture.
