Step 1
Whisk sauce, cream, parmesan, chives, mustard, juice and garlic in a large jug until smooth.
Step 2
Place fish in an oiled, large ovenproof dish (12-cup capacity). Sprinkle with flour seasoned with salt and pepper. Toss to coat. Arrange in a single layer. Pour over sauce mixture.
Step 3
Cook, uncovered, in a 200°C preheated oven for 35 mins.
Step 4
TOPPING: Spread fries evenly over a large oven tray. Cook in the same oven for about 30 mins, turning halfway, until golden brown. Transfer to a large bowl. Add parmesan. Toss to coat.
Step 5
Remove fish from oven. Arrange topping over the fish. Return to oven for 10 mins, or until topping is golden and crisp. Stand for 5 mins before serving.
