TIP: Metal pie dishes are available from speciality kitchen shops and department stores.

Method
Brush 4 x 1-cup capacity metal pie dishes with butter.
Trim crusts from bread. Discard. Roll bread thinly with a rolling pin.
Line each prepared dish with two bread slices, overlapping slightly. Press down firmly on the join to seal. Brush with butter. Place on an oven tray.
Heat a lightly oiled, large frying pan over a medium-high heat. Add onion and bacon. Cook, stirring occasionally, until lightly golden. Remove from heat. Cool slightly.
Sprinkle half the bacon mixture into bread cases. Carefully crack 2 eggs into each dish. Sprinkle with remaining bacon mixture. Top with cheese.
Cook in a 200°C preheated oven for 15-18 mins, until eggs are just set and edges are crisp and golden. Stand in dishes for 2 mins.
Transfer pies to serving plates. Serve garnished with parsley.    Â
