Step 1
Place corn kernels, creamed corn, onions, flour, eggs and cheese in a large bowl. Season with salt and pepper. Stir until well combined.
Step 2
Heat enough oil in a large, non-stick frying pan to shallow-fry over a medium heat. Add ¼ cup of corn mixture. Using the back of a spoon, press down gently to shape into a 9cm round. Repeat to make another three fritters.
Step 3
Cook over a medium heat for about 4 mins on each side, or until golden brown. Remove. Drain on paper towel. Cover to keep warm. Repeat with remaining corn mixture.
Step 4
Serve warm fritters with salmon, avocado, capers, extra onions and lemon wedges.
