TIP: Use red or green apples in this recipe. For a change, serve fritters with maple syrup or warmed Nutella.

Combine pancake mix and coconut in a large bowl. Gradually whisk in 2 cups water until well combined.
Using an apple corer, remove cores from apples. Trim ends. Cut into 1cm-thick rounds.
Heat a lightly greased, large non-stick frying pan over a medium heat.
Dip an apple round into batter, allowing excess to drip away. Add to pan. Repeat with five more slices. Cook for about 2 mins on each side, or until golden brown.
Transfer fritters to an oven tray. Lightly cover with foil. Place in a 100°C preheated oven to keep warm.
Repeat with remaining apple slices and batter, greasing the pan with melted butter between batches.
Serve warm fritters with salted caramel topping and ice-cream.
