Cajun Beef and Corn Kebabs

Best served with tzatziki, these juicy kebabs make for a delicious mid week meal.

TIP: You will need 8 x 25cm metal skewers for this recipe. Kebabs can be made several hours ahead. Keep covered in the fridge. 

Ingredients

Method

1.

Boil, steam or microwave corn until tender. Cool slightly. Cut each cob in half. 

2.

Cut beef into 4cm pieces. Toss beef with seasoning in a bowl. 

3.

Thread corn, beef, capsicum, and onion alternately onto skewers. Spray with cooking olive oil. 

4.

Heat a lightly oiled, barbecue grill plate over medium heat. Add skewers. Cook, turning reguarly, for about 8 to 10 minutes, or until cooked to your liking. 

5.

Serve kebabs with tzatziki.
