Quick and fresh Lemongrass Beef and Noodle Lettuce Bowls

These delicious bowls make the perfect meal for lunch or dinner, prepped and cooked in only 30 minutes.

Ingredients

Dressing

Method

Step 1

To make dressing, combine all ingredients in a small jug.

Step 2

Toss beef with lemongrass and 2 tbsps. of the dressing in a large bowl.

Step 3

Prepare noodles according to packet directions. Drain. Rinse under cold water. Drain well. Place in a large bowl. Cut into shorter lengths with kitchen scissors.

Step 4

Halve cucumbers lengthways. Using a teaspoon, scrape out seeds. Thinly slice cucumber. Add to noodles with carrots.

Step 5

Heat an oiled, large frying pan over a medium to high heat. Add beef. Cook for about 4 to 5 minutes on each side for medium, or until cooked to your liking. Remove. Rest, loosely covered in foil, for 5 minutes. Thinly slice.

Step 6

Add remaining dressing to noodle mix. Divide lettuce among serving bowls. Top with noodle mix, beef, herbs and nuts.
