1.Cook gnocchi according to packet directions. Drain.
2.Peel pumpkin. Cut into 1cm pieces. Boil, steam or microwave until tender. Drain.

Heat butter in a large, non- stick frying pan over a medium to high heat. Add gnocchi, garlic and thyme. Cook, stirring, for about 3 minutes, or until starting to brown.
4.Add pumpkin. Cook, stirring occasionally, for about 5 minutes, or until lightly golden. Add cream, water and spinach. Cook, stirring, for about 2 minutes or until spinach is just wilted. Season with salt and pepper.
5.Serve with parmesan.
