Mouth-watering and fresh Moroccan Lamb and Couscous Bowls

A healthy combo that tastes even better than it looks! This bowl comes together in just 30 minutes and serves four people.

Ingredients

Method

Step 1

Bring 2½ cups of water to the boil in a medium saucepan. Stir in couscous. Reduce heat. Cover and simmer for 10 to 12 minutes, or until liquid is absorbed and couscous is tender. Transfer couscous to a large bowl. Cool. Using a fork, stir in 1 tblsp of the dressing.

Step 2

Meanwhile, rub lamb all over with seasoning.

Step 3

Heat an oiled chargrill plate or barbecue grill plate over a medium to high heat. Add lamb. Cook for about 4 minutes on each side, or until cooked to your liking. Remove. Rest, loosely covered with foil, for 5 minutes. Thickly slice.

Step 4

To serve, divide couscous, salad mix, tomatoes, lamb, olives and onions among four wide, shallow bowls. Sprinkle with feta and almonds. Drizzle over remaining dressing.
