Step 1
Place noodles in a large heatproof bowl. Cover with boiling water. Stand for 10 minutes. Stir occasionally to separate strands. Drain. Rinse under cold water. Drain well. Cut into shorter lengths
using kitchen scissors.
Step 2
Meanwhile, to make satay dressing, whisk all ingredients in a jug until smooth.
Step 3
Place noodles and chicken in a large bowl. Add ¾ cup of the dressing. Toss well. Add pineapple, cucumbers, salad leaves, coconut and herbs. Toss well.
Step 4
Serve noodle salad with remaining dressing.
