A crispy, light and fruity cabbage and apple salad that makes a lovely side. It’s a great option to serve when heavier dishes are on the menu, like Christmas.

Step 1
To make dressing, whisk all ingredients in a small jug until combined.
Step 2
Cut lettuce crossways into 1cm slices. Transfer to a large bowl. Place apple in a small bowl. Add juice. Toss to coat.
Step 3
Add apple to lettuce with carrot, cabbage and snow peas. Drizzle with dressing. Toss to combine.
Step 4
Transfer to a serving plate.
