Method
Step 1
To make marinade, process all ingredients in a small food processor until smooth. Transfer to a large bowl.
Step 2
Cut each chicken fillet horizontally through the side to give two thin pieces. Place chicken between two sheets of baking paper. Using a rolling pin, gently pound to flatten slightly to an even thickness. Add to marinade in bowl. Toss to coat. Cover and refrigerate for at least 30 minutes. Season with salt.
Step 3
Heat a lightly oiled, large, non-stick pan over a medium to high heat. Add chicken. Cook for about 2 to 3 minutes on each side, or until cooked.
Step 4
Combine aioli with 2 tsps water in a jug.
Step 5
Divide lettuce, sliced tomato, cheese, and chicken among the bases of the rolls. Drizzle over aioli. Replace tops.
