This Bircher Porridge recipe is an exclusive extract from Jock Zonfrillo’s book, Recipes to Remember.
Jock’s family were determined to finish his project after his unexpected passing more than two years ago. Lauren Zonfrillo, Jock’s widow, shared in an Instagram post in June, “He’d started his cookbook when we lost him, so we finished it. Recipes to Remember is filled with the meals he made for us, photos from our family albums, and – in his own words – what he loved about food and life.”

NOTE: Bircher porridge will keep in the fridge for up to three days, so it’s a great make-ahead breakfast.

This is child’s play – other than the grating, they can make this themselves! Combine all the ingredients in a large bowl and mix around, then cover or place in an airtight container and pop in the fridge.
Try to make it the night before so life is easier in the morning, but a couple of hours soaking will do the trick. And then it will last for up to three days in the fridge.
To serve, add whatever fresh fruit, seeds and nuts that you like. In our house, it’s always a fruit face.
