Step 1
When the roast is cooked, remove meat and vegetables from roasting pan. Cover meat loosely with foil and rest. Transfer roast vegetables to an oven tray and return to oven to crisp up nicely.
Step 2
Drain away most of the pan juices from roasting pan, leaving 2 tbsp. Place pan over a medium heat. Add the plain flour. Cook, stirring, for about 2 mins, until bubbling and lightly browned, scraping up any crispy bits clinging to the base of pan.
Step 3
Gradually add the stock, stirring constantly. Bring to the boil. Simmer for about 5 mins, stirring occasionally, until gravy thickens. Season with salt and pepper.
