Roast Pork with Apricot-Glazed Apples is a Sunday night special

The family will be raving over this roast pork dish, it's worth that little bit of extra time.

TIP:
For the perfect roast pork crackling, refrigerate pork overnight, rind-side up, uncovered.

Ingredients

APRICOT GLAZED APPLES

Method

Step 1.

Season pork flesh with salt 
and pepper. Rub combined 
sea salt and 2 tsp of the oil 
over rind. Place on a roasting 
rack in a roasting pan.

Step 2.

Cook in a 240C preheated oven for 35 mins, or until rind has blistered. Reduce oven to 180C. Cook for a further 1 hour 30 mins, or until pork juices run clear when tested. Remove. Rest pork, uncovered, for 15 mins.

Step 3.

For the Apricot-Glazed Apples, heat the remaining oil in a separate roasting pan over a medium heat. Add onions and fennel seeds. Cook, stirring, for 5 
mins, or until soft.

Step 4.

Add apples, combined stock cube, jam, vinegar and ½ cup boiling water. Bring to boil. Remove pan from heat. Cover pans tightly with foil.

Step 5.

Cook in same 180C oven for 
20 mins. Remove foil. Cook 
for a further 10 mins, or until apples are tender.

Step 6.

Serve pork with apples 
and broccolini.
