Method

Step 1

Place apricots in a heatproof bowl. Cover with boiling water. Stand for 15 minutes. Drain.

Step 2

Meanwhile, place the chicken in a large bowl. Sprinkle over paprika, cinnamon, ginger, and turmeric. Toss to coat.

TIP: For a shortcut, replace paprika, cinnamon, ginger, and turmeric with 1 heaped tblsp ras el hanout or Moroccan spice blend, available from greengrocers and some supermarkets.

Step 3

Heat an oiled, large, deep frying pan or flameproof casserole dish over medium to high heat. Add chicken in two batches. Cook, turning for 4 to 5 minutes, or until browned. Transfer to a plate.

Step 4

Add onion and garlic to the same oiled pan. Cook, stirring, for 2 to 3 minutes, until soft. Add tomato paste. Cook, stirring, for a further 1 minute.

Step 5

Stir in stock, honey, and apricots. Bring to a boil. Return chicken to pan. Reduce heat. Simmer, covered, for 15 minutes. Remove lid. Simmer, uncovered, for a further 15 minutes, or until chicken is tender and liquid is slightly thickened. Season with salt and pepper.

Step 6

Scatter over almonds and coriander. Serve with couscous, beans, and lemon wedges.
