Prosciutto-Wrapped Seasoned Pork

Method

Step 1

Place the stuffing mix, cranberries, butter, sage, and garlic in a large bowl. Rub the butter through the mixture with your fingertips until well combined. Add 1 tblsp water, and mix until the mixture clumps together.

Step 2

Using a sharp knife, cut one pork fillet lengthways down the centre, about three-quarters of the way through. Open out flat. Place a large sheet of baking paper on a clean bench. Lay six prosciutto slices, side by side and slightly overlapping to cover paper. Place pork fillet over prosciutto, Repeat with remaining prosciutto and pork fillet.

Step 3

Divide the stuffing mixture evenly over the pork. Roll up prosciutto to enclose. Secure the roll at 3cm intervals with kitchen string.

Step 4

Pull out the pan and basket from a 7-litre air fryer. Spray the basket with oil. Arrange one pork roll in the basket. Spray with oil. Slide the pan and basket back into the air fryer. Set the temperature to 180C. Set the timer and cook for 20 minutes until pork is golden and cooked, turning halfway through cooking. Repeat with the remaining pork roll (if using a smaller air fryer, cut pork rolls in half).

Step 5

Serve with roast potatoes, carrots, and gravy. Garnish with fried sage leaves.
