Method

Step 1

Grease a 12cm x 22cm medium loaf pan. Line base and sides with baking paper.

Step 2

Place all ingredients in a large bowl. Stir with a wooden spoon until well combined. Spoon into prepared pan. Smooth over top.

Step 3

Cook in a 160°C preheated oven for 50-55 mins, or until cooked in the centre when tested with a skewer. Remove. Stand in pan for 15 mins. Turn out onto a wire rack to cool.

Step 4

Serve plain or toasted, with or without butter.
