This white-style rocky road looks every bit the festive sweet. They look great on a sweets buffet table on Christmas day, or as an edible Christmas gift.

1.Line an 18cm x 28cm pan with baking paper. Melt chocolate and let cool. Add marshmallows, cherries and ¾ cup of the pistachio nuts. Mix well.
2.Spread the mixture into the prepared pan and sprinkle with the remaining pistachio nuts. Refrigerate until set. Cut into pieces to serve.
