A quick & easy Creamy Potato & Radish Salad recipe

Ingredients

TIP: Salad can be prepared several hours ahead and keep, covered in the fridge. Add dressing just before serving.

Method

Step 1

Cut potatoes in half. Gently boil potatoes in a large saucepan for about 12 minutes or until tender. Drain, rinse under cold water. Drain. Transfer to a large bowl.

Step 2

Meanwhile, mix together yoghurt, mayonnaise, horseradish cream, and vinegar in a bowl. Season with salt and pepper.

Step 3

Add radishes, spring onions, olives, and dressing tothe bowl. Gently toss to combine. Serve.
