Combine sweet potato, onion, spice mix, and oil in a large bowl.
Pull out a pan and basket from your 7-litre air fryer. Transfer the sweet potato and onion to the basket. Slide the pan and basket back into the air fryer. Set the temperature to 200C. Set the time and cook for 12 to 15 minutes, stirring halfway, until lightly golden.
Scatter the chorizo over the sweet potato. Set the timer and cook for a further 5 minutes until lightly golden and cooked. Transfer to a large bowl. Add salsa, corn, and coriander. Stir until combined. Divide the mixture among tortillas (about 3/4 cup). Sprinkle over cheese.
Place half the tortillas in a basket. Set the temperature to 190C. Set a timer and cook for about 5 minutes until the cheese is melted and the tortillas are crisp. Remove. Repeat with remaining tortillas.
Top with sour cream, avocado, and coriander leaves. Serve with lemon wedges.
