Step 1
Arrange chicken breasts in a single layer in the removable bowl of a 5 to 6-litre slow cooker. Scatter over onion, capsicum, bean mix, and tomatoes. Sprinkle with spice mix. Stir in passata, salsa, and 3/4 cup water. Cover with lid.
Step 2
Cook on high for 4 hours.
Step 3
Meanwhile to make guacamole, mash avocado in a small bowl. Stir in coriander and juice. Season with salt.
Step 4
Remove chicken from slow cooker. Shred with two forks. Return to slow cooker. Stir in tortilla strips. Scatter cheese over top. Cover with lid.
Step 5
Cook on High for 35 to 40 minutes, until the cheese is melted.
Step 6
Serve with guacamole, coriander sprigs and lime wedges.
