Step 1
In a large pan on medium heat, place in whole tomatoes, chopped brown onion, and jalapeno, slightly char. Place into a food processor and blitz through.
Step 2
Meanwhile, in the same pan, add a drizzle of EVOO, and add in the chorizo sausage mixture. Stir constantly and add in red kidney beans.
Step 3
Pour in tomato mixture, canned tomatoes, and chicken stock. Reduce by 1⁄2.
Step 4
Crack eggs into the mixture, and place on the lid to cook through.
Step 5
Serve in bowls with sourdough, creme fraiche, coriander, and a squeeze of lime, and enjoy!
