Cherry Chia Jam Protein Overnight Oats

Breakfast is a big deal in our household because I truly believe the morning meal is the perfect time to refuel from the night before.

A balanced breakfast can give you energy, regulate appetite, and provide essential nutrients like wholegrains, fibre, and certain antioxidants to help you concentrate and perform at your best

Method

Step 1

In a medium bowl, combine oats, milk, and yoghurt; mix well; cover and refrigerate the mixture for four hours or overnight.

Step 2

Make Cherry Chia Jam. In a small saucepan, combine cherries and honey over medium heat. Cook until cherries soften and release juices, about 5-7 minutes. Remove from heat, stir in chia seeds and vanilla extract, stand and cool to room temperature. Transfer the jam to an air-tight container and refrigerate until needed.

Step 3

To serve, spoon one-third of the oat mixture evenly in a portable jar. Top with half the chia cherry jam mixture. Continue layering with the remaining oat mixture and chia cherry jam mixture.

Step 4

Top with strawberries, nuts, and fresh mint.
