Add 1 and a half of the avocados into a blender with lime juice, salt, garlic, and water until super smooth and creamy. It should be puree-like.
Finely dice the onion, tomato, and green chili.
With the second half of the remaining avocado, push it through a cooling-off baking tray (those ones you rest cakes on the kitchen counter after being in the oven). You’ll get deliciously cubed avocado on the other side!
Gently fold the diced ingredients and cubed avocado throughout the avocado puree in a serving bowl. The combination of the pureed avocado, cubed avocado, and finely diced ingredients, gives it a soft and chunky texture so your corn chip doesn’t break, whilst still having the maximum guacamole flavour!
Taste and add extra lime juice, chili, or salt as you desire.
Now is the time to test it out…dunk your corn chip into the guacamole and load it up with fresh avo goodness!
