TIP: Corn cobs can be replaced with a 420g can of corn kernels.

Ingredients

Method

Step 1.

Cook pasta in a large saucepan of boiling, salted water until tender. Drain. Cool.

Step 2.

Heat an oiled, large non-stick frying pan over a medium-high heat. Add bacon. Cook, stirring occasionally, for 3-5 mins, or until crisp. Remove. Drain on paper towel.

Step 3.

Cut kernels from corn cobs.

Step 4.

Place pasta, bacon, corn, capsicum, onions and dressing in a large bowl. Toss to combine. Transfer to a serving bowl.

Step 5.

Serve garnished with extra onion and parmesan.
