Preheat your oven to 180C fan-forced. Get that oven ready for some baking action! Then line a 20cm x 30cm baking tray (or is it a slice pan?) with baking paper.
In a large bowl, crack the eggs and whisk them together until well combined. Pour in the olive oil and give it another quick whisk. Now the eggs are nice and glossy!
Add the self-raising flour, mixing until smooth – no lumps allowed! Toss in the grated zucchini, diced onion, bacon (optional), and grated cheese – this is where the magic happens.
Stir everything together until well mixed, making sure the ingredients are evenly distributed. Spread it out in your prepared tray right to the edges.
Place the tray into the oven and bake for 30 minutes, or until the top is golden and crispy. Once baked to perfection, let the slice cool slightly before cutting into pieces. Serve it warm or cold.
