TIP – We used Smokey BBQ Chicken Kebabs from Woolworths. Replace them with a different flavour, if preferred.

Step 1
Heat an oiled barbecue grill plate over a medium-high heat. Add kebabs. Cook, turning regularly, for 10-15 mins, until cooked through.
Step 2
Cook corn on sthe ame hot barbecue grill plate, turning occasionally, for 6-8 mins, until lightly charred. Remove. Cool slightly. Cut kernels from cobs.
Step 3
Mash together avocado and juice in a bowl. Season with salt and pepper.
Step 4
Divide lettuce, tomatoes, corn, capsicum, and corn chips among four wide, shallow serving bowls. Top with mashed avocado and chicken kebabs. Serve with coriander sprigs and lime wedges.
