TIP: We used Macro breast fillet crumbed schnitzels from Woolworths in all recipes. If using crumbed schnitzels from a butcher or chicken shop, shallow fry in hot oil until golden and cooked through.

Step 1
Cook schnitzels according to packet directions. Transfer to an oven tray.
Step 2
DRESSING: Combine all ingredients in a small bowl.
Step 3
Spread 1 heaped tbsp dressing over the top of each schnitzel. Top evenly with corned beef and cheese.
Step 4
Cook under a preheated grill for about 5 minutes, until the cheese has melted.
Step 5
Meanwhile, combine sauerkraut and dill in a small bowl.
Step 6
Top schnitzels with sauerkraut and extra cucumbers. Serve with mashed potatoes, salad leaves, and the remaining dressing.
