Don’t overcook pork or it will become dry. Pork can be replaced with chicken breasts. Cooking time will vary.

Cook potatoes according to packet directions.
2 Meanwhile, combine the pork, paprika and garlic in a large bowl and season with salt and pepper. Toss to coat.
3 Heat an oiled, large, non-stick frying pan over a medium to high heat. Add pork in two batches. Cook for about 3 minutes on each side, or until cooked. Remove. Rest, loosely covered with foil for 3 minutes.
4 To make salad, combine all ingredients in a large bowl.
5 Serve pork with sauerkraut and potatoes.
