Method

Step 1

SALSA: Combine all ingredients in a bowl.

Step 2

Heat oil in a large saucepan over a medium heat. Add onion. Cook, stirring occasionally, until soft. Add spice blend. Cook, stirring, for 30 secs. Add pork, sauce and ½ cup water. Cook, stirring, for about 2-3 mins, until sauce is boiling and mixture is hot.

Step 3

Meanwhile, heat tortillas, one at a time, in a medium, non-stick frying pan over a medium-high heat for about 1 min on each side, or until lightly toasted.

Step 4

Serve tortillas filled with pork, salsa, coleslaw, jalapeños and sour cream.
