TIP: Serve these wedges as a snack with garlic dip or hummus dip, or as a tasty vegetable side dish.

Method

Step 1

Spread wedges evenly over a large oven tray lined with baking paper.

Step 2

Cook in a 220°C preheated oven for 15 mins. Remove.

Step 3

Transfer wedges to a large, heatproof bowl. Drizzle with oil. Toss well. Add polenta, parmesan and rosemary. Toss to coat. Return to same oven tray lined with baking paper.

Step 4

Return to the same oven for 15 mins, tossing halfway through, until golden brown and crisp.

Step 5

Serve garnished with rosemary sprigs.
